In recent years, Marcus Samuelsson has reimagined the way he cooks, focusing more on nourishing, healthy, “of-the-earth" ingredients from around the world: coconut, rice, corn, acai, plantains, teff, chillis and more. In BACK TO GREEN (Avery, on sale October 20, 2026), Marcus highlights these ancient ingredients, explaining that their origins tell stories of ancestry, migration, and resilience. Learning from chefs and farmers from the Caribbean and South America to East Asia and Africa, Marcus sheds light on how these foods bind communities and can lead us on a path to healthy living.

With an emphasis on superfoods present in the diets of countries across the Caribbean, the Americas, the Pacific, Asia, and Africa, the cookbook is full of diverse, uber healthy foods. His vegetable-forward recipes include:

• Papaya Passion Fruit Smoothie

• Steamed Black Cod with Spicy Pineapple Salsa

• Eggplant Omelet with Banana Ketchup

• Rice Noodle Bowl with Ginger and Garlic Broth

• Lentil Salad with Coconut Turmeric Vinaigrette

• Vegetarian Injera Lasagna

BACK TO GREEN features profiles from global chefs and producers, celebrating food through the lens of sustainability, ritual, and healing. Marcus is passionate about showcasing the cuisines of underrepresented communities and giving them a voice. A strong advocate for diversity, his groundbreaking recipes emphasize the importance of multicultural cuisine. These recipes are meant to be shared with your community and passed down for years to come.

“It is exciting to watch chefs choose to find creativity and flavor by mostly cooking with plants, breaking convention, and redefining what foods are delicious and satisfying,” Marcus writes. This transformation is shaping the ways of eating that will sustain our lifestyles, our health, and our planet.”
